Need something to do with all those fresh peaches laying around this time of year?
This is my moms recipe. Its really, really good! You can't just have one piece. (Oh and its super easy).
1 C sugar
4 TBS cornstarch
1 C water
2 TBS fresh lemon juice
dash of salt
1/4 C butter
Whipped cream
4-6 peaches
cooked pie shell
Combine 1 C. sugar with 4 TBS. cornstarch. Add 1 C water stir together.
Add 2TBS lemon juice (fresh lemon juice is best), dash of salt, 1/4 C butter and cook until thick. Then cool completely.
Add 4-6 sliced peaches to mixture. Pour into cooked pie shell and let it set in your fridge for a couple hours. Top with real whipped cream.
