Fried Rice

4 cups cooked rice

chopped onion (1/3 cup)

frozen peas (1/2 cup)

coarsely grated carrot (just cooks faster than sliced or chopped--about 1/2 cup)

chopped ham,or left over pork roast--you could also use shrimp or chicken. (1 cup)

1 egg well beaten

soy sauce (3-4 TB)

I put the onion, peas, carrots, and meat in a large skillet with a couple of Tablespoons of oil and cook until the onion is barely tender. Add the egg and scramble in with the veggies. Add the rice and mix all together, Then I sprinkle soy sauce over the top and mix in until it tastes right.
