Peanut Butter Cookies

I recently went to a cookie exchange for Relief Society. We gathered recipes of our favorites and these are some of mine!

These are the softest peanut butter cookies I've ever had!

1 1/2 cup butter
1 1/2 cup peanut butter
1 1/2 cup granulated sugar
1 1/2 cup brown sugar
3 eggs
1 1/2 tsp vanilla
2 tsp soda
3/4 tsp salt
3 3/4 cups flour

Cream butter, peanut butter, eggs, vanilla and sugars together. Sift dry ingredients, and blend with the cream mixture. Shape into balls, roll in sugar if desired. Place 2 inches apart on cookie sheet, make a criss-cross with a fork in each cookie. Bake at 375 for 10-12 minutes. Cool slightly, remove from pan and let cool completely. Makes 9 dozen.
